Fish
As well as ensuring the fish is from the best sources, and immediately frozen to preserve freshness, it’s our secret recipe batter that really sets our fish apart from the rest. The batter we use is unique to us — no-one else knows the secret recipe, and we certainly don’t let anyone else use it! Our fish is cooked quickly at high temperatures without a large oil temperature drop. This produces a beautiful crispy outer batter, and allows the fish to retain the succulent ‘steamed’ texture that our customers love.

Chips
We never, ever fry our fish and chips together. They’re very different, so they need to be cooked differently to achieve the best taste. Chips are cooked for far longer, with a large temperature drop and temperature recovery to produce that really irresistible crispy coating and fluffy, moist centre.

Other products
The range of products that we cook and serve is so varied, we can’t list them all here, but you can be assured that we only ever serve the highest quality food. As much as possible is cooked to order — we don’t let food hang around for long. In fact, we’re very strict on how long we keep food for. Fish is kept for a maximum of 35 minutes and chips for just 20. Even within these time limits, we constantly check the quality of our food. Fortunately, things don’t tend to hang around for long at all before they’re snapped up.
